The impacts of soil, variety, microclimate and winemaking techniques. Most wines will be partially decanted and served nearly room temperature.

Flight One: Blanc de Blancs and Blanc de Noirs :

1 – Multivintage Grand Cru 100% Chardonnay versus

2 – Multivintage Grand Cru 100% Pinot Noir

 

Flight Two: Light body and full body styles:

3 – Stainless Steel non malo-lactic Cuvee versus

4 – Oak fermented and oak aged lactic Cuvee

 

Flight three: The extra quality dimension from ageing in the bottle before disgorging:

5 – Vintage Cuvee Chardonnay dominant with extended ageing on yeast lees versus

6 – Vintage Cuvee Pinot Noir dominant with extended ageing on yeast lees (vieillissement prolonge)
